Coconut Protein Pancakes

These delicious pancakes come together so quickly and can even be made in batches for easy grab and go breakfasts.
Ingredients
  • Serves 1
  • 2 Tablespoons of Coconut Flour
  • 3 Tablespoons Milk (I used Unsweetened Vanilla Almond Milk but I'm sure any will do)
  • 2 Egg Whites
  • ⅛ Teaspoon of Baking Soda
  • Directions: Heat Non Stick Pan over medium heat. Mix all ingredients in a small bowl and pour into pan. You'll know when they're done! :) Serve with any toppings you like! Try with peanut butter and banana, PB2 and Honey, Almond butter and apples, Good ol' maple syrup and fruit. The possibilities are endless!
Instructions
  1. Heat Non Stick Pan over medium heat.
  2. Mix all ingredients in a small bowl.
  3. Spray cooking spray into pan,
  4. Pour batter into heated pan and smooth out (to make it look more pancake-y)
  5. Let cook for about 3-5 minutes, then flip and cook for another 3 minutes.
  6. Serve with any toppings you like!
  7. Try topped peanut butter and banana, Almond butter and apples, Good ol' maple syrup and butter. The possibilities are endless!
